< 요식업의 명인 정승욱 >

어린시절에 야구를 시작하고부터 프로야구 선수시절까지 대구에서 생활하다가 삼성라이온즈에서 은퇴하고 미국에서 마이너리그와 메이저리그 지도자생활 10년을 끝내고 다시 한국에 들어와 지금까지 인천에 살고 있다.

나도 인천에서 산지도 어느덧 19년째가 되어간다. 인천에서 19년을 살다보니 나도 어느덧 인천 시민이 되어 있다. 지난 27일 가족들과 함께 인천의 자랑인 월미도로 가서 저녁을 먹기로 했다. 이날 가족을 데리고 월미도로 간 것은 '쭈꾸미' 잘하는 집이 있다고 해서 가족을 데리고 회식하러 갔다.

이날 특별히 아내를 위해 월미도로 간것은 다름이 아니라 월미도에서 유명한 쭈꾸미 식당이 있는데 아내가 큰수술 받고 체중이 많이 빠져 건강과 체중을 보충하기 위해 쭈꾸미 집으로 갔다.

이날 갔던 쭈꾸미 집은 음식업계의 명인으로 자부심을 갖고 있는 정승욱 사장이다. 정승욱 사장은 다름이 아니라 어린시절부터 야구를 했던 야구인 후배다. 그는 초등학교와 중학교 그리고 대학교까지 학교 후배다. 거기다가 내가 삼성라이온즈 선수시절 대구 범어동에 있는 경남아파트에 살 때 함께 생활했던 야구인 후배다.

그당시 내가 경남아파트 9동에 살 때 정승욱 후배는 건너편 8동에 살았다. 경기가 없는 날이면 저녁마다 중학생인 정 사장을 불어내어 같이 배트를 잡고 스윙연습했던 기억이 있다. 그당시 그는 대구중학교 다니던 중학생이었다. 어린 학생이었던 그가 이제 장성해서 큰아들이 21살이란다.

어린시절에 함께 살던 정승욱 사장이 어른이 되어서도 지금 인천에서 한 동네에서 같이 살고 있다. 사람의 인연이란 참 묘하다. 어린시절에 함께 했던 야구인 후배가 장성해서도 같이 지낼 수 있어 너무 좋다.

젊은 시절 야구만 하다가 현장에 나와 무엇을 할까 많이 망설이고 고민했다고 한다. 그러다가 정 사장이 좋아하고 관심이 있는 요식업을 시작하게 되었다고 한다. 남들보다 뒤늦게 요식업을 시작하면서 숫한 어려움과 힘든 일들도 많았지만 야구했던 정신으로 중간에 포기하지 않고 여기까지 달려왔다고 한다.

정승욱 후배가 요식업에서 명인으로 이름을 날리기까지 정말 수없는 노력과 공부를 했다고 한다. 지금도 끊임없이 공부하며 어떻게 하면 손님들에게 좋은 재료를 갖고 좋은 음식을 만들어 낼 수 있을지 날마다 연구하고 공부한단다. 그는 나와 여러가지로 인연이 많은 후배다. 요식업계에서 명장으로 이름을 알리고 있는 신재우 명장이 있다.

신재우 명장은 '명장의 모임'에서 권혁돈 감독과 친구 사이다 보니 중간 동생으로 활동하고 있는 자랑스러운 아우다.

예전에도 이야기 했지만 우리들의 모임은 만남의 시간들을 통해 생각, 언어, 행동들까지도 리더의 영향을 받아 리더와 모든 면이 닮아가는 것을 느낄 수 있다. 좋은 사람과의 만남 또한 세상을 살아가는 시간동안 많은 영향을 받게 되고 나를 변화시키기도 한다.

명장들의 모임은 각자가 있는 자리에서 최선을 다하고 그 영역에서 영향력을 끼치는 멋진 사나이들이다. 50년대부터 80년대까지 큰 차이를 보이지만 우리의 대화는 막힘이나 어색함을 전혀 찾아볼 수 없다. 각자가 살아가는 공간과 삶의 스타일도 모두 다르지만 우리의 대화는 한시내를 이루고 모두가 자연스레 하나가 되는 넓은 바다를 이루고 행복의 파도를 즐기고 있다.

정승욱 후배는 신재우 명장과 둘도 없는 형님과 아우 같은 사이란다. 벌써 오랜 시간 함께 요식업을 하면서 친형제처럼 지냈다고 한다. 정승욱 후배가 요식업을 할 때 대한민국 팔도는 거의 다 돌아 다니며 음식을 맛보며 공부했다고 한다.

그는 신재우 명장을 롤모델로 삼고 끊임 없이 공부하고 있단다. 지금은 비록 명인이지만 멀지 않아 꼭 명장이 되겠다며 공부하고 있다. 인천 월미도에 쭈꾸미 차릴 때만 해도 모든 사람들이 다 말렸다고 한다. 그럼에도 정승욱 후배는 꼭 바닷가라고 해서 회만 팔라는 법이 없다며 쭈꾸미로 승부를 걸었다.

정승욱 후배에 의하면 '쭈꾸미'로 승부를 걸 때 신재우 명장과 함께 대한민국 쭈꾸미 잘하고 유명하다는 식당은 다 돌아다니며 자기만의 요리를 연구했다고 한다. 이날 가족들과 함께 쭈꾸미 요리를 먹는데 내가 먹어본 쭈꾸미 중에서 가장 맛이 좋았고 쭈꾸미 자체가 너무 부드럽고 또 보기와는 달리 맵지 않아 수술한 아내가 모처럼 많이 먹었다.

아내는 큰 수술로 인해 매운것을 몇달 동안 먹지 못하는 상황이다. 그런데 정승욱 후배가 자신 있게 쭈꾸미 요리를 내 놓으면서 '한번 드셔 보세요'라는 것이다. 한참 동안 매운것 먹지 못하던 아내가 한번 먹어보더니 '맛나고 좋다'며 그날 수술하고 가장 많이 먹었다.

무엇보다 내가 놀란 것은 정승욱 사장이 오랜 개발로 인해 쭈꾸미가 일반 식당에서 먹는것과는 차원이 다를 정도로 부드럽고 맛나다. 거기다가 매울 것 같은 쭈꾸미 음식이 누구나 쉽게 먹을 수 있도록 양념을 개발했다. 이날 어린 손자도 얼마나 많이 먹는지...

평일 임에도 손님들이 끊이지 않고 계속 들어온다. 처음 오신 손님이면 직접 테이블에 가서 요리를 해주며 설명한다. 그리고 먹는 법과 굽는 방법까지 다 이야기하며 손님이 편안하게 먹을 수 있도록 옆에서 도와주고 서빙해 주고 있다.

정승욱 후배를 보며 그가 요식업에서 만큼은 '프로'구나 라는 것을 보게 되었다. 사장이 저렇게 열정적으로 일을 하고 손님에게 최선을 다해 맛나게 먹을 수 있도록 도와주는 사장은 좀처럼 잘 볼 수가 없다. 지금도 신재우 명장과 자주 만나 끊임 없이 공부한다고 한다.

이날 정승욱 후배로 인해 푸짐하게 저녁을 먹고 또 무엇보다 큰 수술 받고 제대로 식사하지 못한 아내가 모처럼 맛나게 많이 먹어서 너무 좋았다. 맛나게 저녁을 먹고 2차로 정승욱 후배가 운영하는 카페에 갔다. 식당 옆에 카페도 운영하는데 기존의 카페와 색다르게 운영해야 한다며 자기만의 음료들을 개발해 손님들에게 파는데 이곳에서만 마실 수  있는 음료로 인해 연인들이 끊이지 않고 들어온다.

이날 늦은 시간까지 후배와 그동안 있었던 일들에 대해 많은 이야기 나누다보니 어느새 시간이 많이 지났다. 정승욱 후배를 보며 야구인의 한사람으로서 자부심을 느낀것은 그의 태도였다. 비록 야구인으로서 못다 이룬 꿈을 새롭게 시작한 요식업에서 만큼은 최고의 명장이 되기 위해 오늘도 끊임 없이 노력하고 연구하는 후배가 정말 자랑스럽다.

After starting baseball as a child and living in Daegu as a professional baseball player, he retired from the Samsung Lions and came back to Korea after 10 years as a minor league and major league leader in the United States, and has lived in Incheon until now.

It's been 19 years since I've lived in Incheon. After living in Incheon for 19 years, I've already become an Incheon citizen. On the 27th, I decided to go to Wolmido, Incheon's pride, and have dinner with my family. I went to Wolmido with my family on this day because I heard there was a restaurant that was good at "jjjukkumi," so I took my family to dinner.

On this day, I went to Wolmido for my wife, but there is a famous webfoot octopus restaurant in Wolmido, and my wife lost a lot of weight after a major surgery, so I went to a webfoot octopus restaurant to supplement her health and weight.

The jukkumi restaurant that I visited on the day is CEO Jeong Seung-wook, who is proud of himself as a master in the food industry. CEO Jeong Seung-wook is a junior baseball player who played baseball since childhood. He is a junior at elementary school, junior high school, and university. He is also a junior baseball player who lived with me when I was a player of the Samsung Lions at Gyeongnam Apartment in Beomeo-dong, Daegu.

At that time, when I lived in Gyeongsangnam-do apartment building 9, my junior Jeong Seung-wook lived in the 8th building across the street. Every evening on a day when there was no game, I remember blowing out president Jeong, a middle school student, to hold the bat and practice swing together. At that time, he was a middle school student in Daegu Middle School. He was a young student, and now his eldest son is 21 years old.

President Jung Seung-wook, who lived with him when he was a child, is now living together in a neighborhood in Incheon even as an adult. The relationship between people is strange. It is so nice to be able to stay together even when his junior, who was a baseball player who he was with when he was a child, grows up.

It is said that he only played baseball when he was young and hesitated a lot about what to do when he came to the scene. Then, he started a restaurant business that CEO Chung liked and was interested in. There were many difficulties and difficulties as he started the restaurant business later than others, but he did not give up in the middle with the spirit of baseball and ran this far.

It is said that Jung Seung-wook, a junior, worked hard and studied hard until he became a master in the restaurant industry. He continues to study every day how to make good food with good ingredients for customers. He is a junior who has a lot of relationships with me in many ways. There is a master Shin Jae-woo, who is known as a master in the restaurant industry.

Master Shin Jae-woo is a proud younger brother who is working as a middle brother because he is friends with director Kwon Hyuk-don at the "Master's Gathering."

As I have said before, our meetings are influenced by the leader in thoughts, language, and actions through meeting times, and you can feel that all aspects of the leader resemble him. Meeting good people is also influenced by a lot during the time of living in the world and changes me.

The group of masters is a group of wonderful men who do their best where they are and influence in that area. From the 50s to the 80s, there is a big difference, but our conversation is not blocked or awkward at all. Although each person's space and style of life are different, our conversation is accomplishing a short period of time, and we are enjoying the wave of happiness, forming a wide sea where everyone naturally becomes one.

Jung Seung-wook's junior is like an elder brother who is close to Shin Jae-woo. It is said that they have already been like real brothers while working in the restaurant business together for a long time. When Jung Seung-wook was working in the restaurant business, he said that he went around most of Paldo in Korea and studied while tasting food.

"I am studying continuously, taking Shin Jae-woo as my role model. Now, although he is a master, he is studying hard, saying that he will become a master soon enough. It is said that many people stopped him when he opened jukkumi in Wolmido, Incheon. Nevertheless, Jeong Seung-wook said, "Just because it is a beach, there is no way to sell raw fish," and he waged a fight with jukkumi.

According to Jeong Seung-wook, when he was competing with "Jukkumi," he went around all the restaurants that are said to be good at jukkumi in Korea with master Shin Jae-woo and studied his own dishes. I was eating jukkumi with my family on this day, and it was the best jukkumi I had ever eaten, and the jukkumi itself was so soft and not spicy, so my wife, who had surgery, ate a lot.

My wife has been unable to eat spicy food for several months due to a major surgery. However, when Jeong Seung-wook confidently served the octopus dish, he asked her to try it. My wife, who couldn't eat spicy food for a long time, tried it once and said, "It's delicious and good," and ate the most after surgery that day.

What surprised me most was that CEO Jeong Seung-wook was soft and delicious, unlike ordinary restaurants due to his long-term development. In addition, he developed a seasoning so that anyone can easily eat webfoot octopus that is likely to be spicy. How much his young grandson eats on this day...

Even on weekdays, customers are constantly coming in. If you're a first-time guest, go to the table and cook and explain. And they talk about how to eat and bake, and they help and serve customers to eat comfortably.

Looking at Jung Seung-wook's junior, I saw that he was a 'professional' at least in the restaurant industry. It is rare to see a boss who works so passionately and helps customers to eat deliciously. Even now, he meets Shin Jae-woo frequently and studies constantly.

It was so nice that his wife, who had a big surgery and couldn't eat properly, had a lot of delicious food for the first time in a long time due to his junior Jeong Seung-wook. I had a delicious dinner and went to a cafe run by my junior Jeong Seung-wook for the second time. He developed his own drinks and sold them to customers, saying that he runs a cafe next to the restaurant, but lovers are constantly coming in because of the drinks that can only be drunk here.

A lot of time has passed since we talked about what had happened with our juniors until late this day. It was his attitude that made me feel proud as a baseball player while watching Jung Seung-wook. Although I am very proud of my junior who constantly strives and researches to become the best master in the restaurant industry, which has renewed my dream of becoming a baseball player.
